Easy Kimchi Beef and Lettuce Bowl: Packed with Probiotics!!

Ingredients
  

  • 2 lbs. Ground Beef I used grass feed
  • 1 tbsp olive oil for pan
  • 1 head Butter Lettuce bed of lettuce for beef
Sauce For Ground Beef
  • 1/4 cup Liquid Aminos
  • 1/4 cup Rice Vinegar
  • 1/4 cup Honey
  • 1 tbsp Sesame Oil
  • 4 cloves Minced Garlic
  • 2 tsp Crushed Ginger
  • 1/2 tsp Black Pepper
Toppings
  • 1 cup Shredded Carrots
  • 1 English Cucumber
  • 1 cup Kimchi I used store bought from Costco
  • 1 bunch Cilantro
  • 4 tbsp Sesame Seeds I used "Everything but the Bagel Seasoning"

Equipment

  • 1 Sauté Pan
  • 1 Chef Knife and Cutting Board

Method
 

  1. Start by adding a small amount of olive oil to a pan and browning 2lbs of ground beef. I used lean grass feed beef for this recipe, but you can use whatever you like.
  2. While the beef cooks mix the sauce together (1/2 cup liquid aminos, 1/4 cup rice vinegar, 1/4 cup honey, 1tbs sesame oil, 4 cloves of minced garlic, 2 tsp crushed ginger, and 1/2 tsp black pepper).
  3. Add the sauce to the cooked beef and stir everything together. Cook for 3-4 minutes, untouched, until the sauce thickens and begins to caramelize on the bottom of the beef.
  4. Serve the beef over fresh lettuce or rice. Add toppings like fermented kimchi, shredded carrots, cilantro, cucumbers, and sesame seeds. If you don't have plain sesame seeds you can add Everything but the Bagel Seasoning, it works great.
  5. Enjoy with chopping sticks!!!

Notes

If you don't want to do a bed of lettuce, try rice instead or better yet mix cauliflower rice with sticky or jasmine rice, you can hardly tell it's there. A good ratio is 2 cups of cooked sticky rice mixed with 3 cups or a 12 oz frozen bag of cauliflower rice.
