Einkorn Chocolate Chip Cookies

Einkorn flour is gaining popularity as a healthier and more digestible alternative to modern wheat. Einkorn is one of the oldest cultivated ancient wheat grains. There is evidence of its use far before Christ's birth. It is often referred to as "nature's original wheat."

Ingredients
  

  • 1 stick unsalted butter
  • 1 cup coconut sugar sub cane or succinate sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups all-purpose einkorn flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chunks sub chocolate chips
  • 1 pinch salt on top of each cookie

Equipment

  • cookie scoop
  • mixing bowl
  • hand mixer

Method
 

  1. Preheat the oven to 375 degrees.
  2. In a mixer or with a hand mixer, cream together butter and sugar.
  3. Add in egg and vanilla. Mix until well combined.
  4. In a separate bowl, mix together dry ingredients and add to the wet ingredients. 
  5. Mix together until just incorporated.
  6. Fold in chocolate chunks.
  7. Scoop cookies onto a parchment lined cookie sheet, sprinkle with coarse salt, and bake for 10-12 minutes or until the edges start to turn golden brown.
  8. Place on to a wire rack to cool and enjoy!!!
