The Ultimate Fresh Milled Carrot Muffins with Mascarpone Frosting

Why Freshly Milled Flour Is Best?

Carrot muffins are naturally moist due to the veggies, but store-bought whole wheat flour can often make them feel heavy. Milling your own grains provides multiple benefits.

The “Kid-Approved” Secret

Let’s be real: sometimes “healthy” is a hard sell for kids. However, fresh milled flour has a naturally sweeter, milder taste than the bitter “Whole Wheat” flour sold in stores. My kids loves these especially with the frosting.

How To Make Fresh Milled Carrot Muffins

Start by preheating your oven to 400 F.

Mill 4 cups of soft white wheat and einkorn berries. I used a 50/50 mixture for this recipe because I love the flavor of the einkorn combined with the texture of the soft white wheat. You don’t have to use both for this recipe; you can use either one

Grab two muffin trays and line them with paper liners or oil them well.

In a large bowl whisk together the fresh-milled flour, baking powder, baking soda, and salt.

Peel and shred 2 cups of carrots in a small bowl.

In a large bowl, mix together the honey, eggs, oil, and vanilla. I use coconut oil; make sure it is melted before mixing it in, or it will clump. Since I use fresh eggs, I always crack them into a separate bowl first before adding them to the mixture.

Add the dry ingredients to the wet including the shredded carrots. Stir just until combined. Never overmix muffins or they will become tough.

Divide the batter evenly among the muffin cups. Filling them about 3/4 of the way full. I use an ice cream scooper. It works great and the kids love to help with this part.

Bake for 25 minutes, until tops are set. I always use a toothpick to check.

Cool in the pan for 5 minutes, then transfer to a wire rack.

The frosting is optional sometimes we make them for breakfast and skip the frosting.

How To Make The Frosting

You don’t have to use mascarpone cheese; if you can’t locate it, cream cheese will work just as well. Mascarpone cheese is the Italian version of cream cheese. I like it better because it is sweeter and less tart. It is frequently used in tiramisu.

To make the frosting, beat the mascarpone cheese and butter together until smooth using a hand mixer or a standing mixer, about 2 minutes.

Add sifted powdered sugar and vanilla extract and beat again until creamy and smooth. If the consistency is too dry, add a splash of cream or milk.

Pipe or frost your muffins and sprinkle a small amount of cinnamon on top.

Enjoy!! If two dozen muffins are too many for your family freeze the extras in a gallon zip lock. Simply take them out of the freezer the night before you want to enjoy them
