We spend almost all day, every day, outside enjoying the sunshine, jumping on the trampoline, and splashing in the pool. I want to give my kids memories of all the time we spent outside in the garden planting seeds and harvesting bountiful baskets of yummy produce. I want them to remember are family picnics in the front yard reading living books while eating tomato sandwiches.

These days it is uncommon for kids to play outside enjoying the fresh air and using their imaginations. All that dirt and sunshine is great for kid’s souls and physical health. 

On the hottest days of summer, when the sun is blazing, there is nothing like a cool popsicle to keep you hydrated and refreshed. The taste of cool mint and strawberries is especially delightful. Sometimes we even use fresh strawberries we picked at our local strawberry patch. My kids go crazy for these popsicles, and they don’t even know they are healthy.

Tips For Making Strawberry Mint Popsicles:

  • For this recipe, you can use frozen strawberries or fresh strawberries. I prefer using fresh but frozen might be cheaper.
  • Buy the refrigerated coconut water. I buy a brand from Costco the coconut water is pink due to natural enzymatic reactions, specifically the oxidation of phenolic compounds.
  • Don’t have honey? You can also substitute the honey for maple syrup. It will have a slightly different flavor, but still delicious. Most of the time we don’t add sweetener, my kids find it sweet enough just from the strawberries.
  • Add some extra lemon zing by adding the zest of one lime. I like to use a micro-plane for zesting. You can also sick the mint if you don’t have it.

How to Make Strawberry Mint Popsicles:

Gather equipment and ingredients.

Wash all produce.

Fresh Mint
Fresh Strawberries

Remove strawberry tops.

Add all ingredients to the blender and blender on high.

Pour liquid into molds and add popsicle sticks.

Ingredients
  

  • 2 Pounds Fresh Strawberries Or Frozen
  • 1 Small Bunch Fresh Mint
  • 14 Fluid Ounces Fresh Coconut Water Pink Preferred
  • 1/4 Cup Honey or Maple Syrup Optional

Equipment

  • 1 Blender
  • 1 12-Piece Popsicle Mold
  • 12 Popsicle Sticks

Method
 

  1. Wash all produce.
  2. Remove strawberry tops. Save for compost or chickens.
  3. Add all ingredients to a blender and blend on high.
  4. Pour into popsicle molds and add popsicle sticks.
  5. Leave in freezer overnight.
  6. Enjoy on a hot summer's day!!
